My favorite Fall snack!

I love pumpkin flavored everything.  Pumpkin bread, pumpkin pie and one of the easiest to make Pumpkin Seeds!  Last year Ian and I made some delicious Pumpkin seeds and we decided to make some more this weekend.  I wanted to share this easy snack recipe!

First you must pick out two large pumpkins to get a decent amount of seeds (approx 6-8 serving sizes)


You will need a knife or Pumpkin carver and a big spoon for scooping the insides out (this way your pumpkin will last longer for decoration purposes).

The pumpkin should look like this on the inside.

You must then separate all the seeds from the stringy insides.

Scoop out the entire inside of the pumpkin.  Last year we learned if you leave any scraps, the Pumpkin will rot very quickly.

Wash the seeds then place them on aluminum foil on a cookie sheet.  Place whatever seasonings you like on seeds.  My personal favorites are Garlic Salt and Lemon Pepper.

Set oven to Bake at 350 degrees.  Then simply place seeds in oven and cook to liking.  We cooked our probably about 40 minutes because we like them a little more crunchy.

This is one of my favorite snacks!
