Lemon Bar Goodness

For Easter, I wanted to make a dessert that was Easter colors and delicious.  One of my all time favorite treats would happen to be lemon bars.  I never thought they’d be an easy thing to make though so I never tried.  However, this year I decided to take a stab at them with this recipe and found they aren’t hard to make at all!  Not to mention, they are sooo good.  I doubled the recipe to make a huge cookie sheet of them so that everyone could have a taste but you can also make a much smaller batch.  I thought about adding ginger again since I just love the combo of the two but decided to keep it simple since I was sharing with everyone.  This recipe is definitely one I recommend for the lemon lover!

Lemon Ginger Heaven!

I’ve been looking for some good Easter Sweets to share with my family over the holidays and since I have such a huge love for Ginger, I decided to bake Lemon Ginger muffins from this recipe.  I also found the adorable cups at this art store that I used to work at which is locally owned, called Richard’s.  I try to support them whenever I can because they always took such great care of me and all my art supplies throughout high school and college 🙂  They have an awesome assortment of home decor and DIY products.  My mom and I spent yesterday baking some fun treats and she’s a great helper!  She helped me get my lemon zest and cubes of ginger from the root.  Neither of us have ever cubed our own ginger but it was actually pretty easy!  Note to self: don’t eat raw ginger, it’s SO spicy and not anything like pickled ginger.  However, it left a great after taste.  Happy Monday!

The lemons came from the tree in my parents backyard and were sooo delicious!  I squeezed the juices into the glaze on the final muffins and it was so good.

I filled the cups about 3/4 full.

I love baking with my mom.  She always is baking pies or breads so she was the perfect person to help me perfect these Spring time treats!  I highly recommend this recipe and picking someone to bake with, especially on a rainy day!

Double Threat – two sinful favorite holiday cookie recipes!

I love to bake and my mom has taught me so much about baking.  Ever since I can remember, she’s always been baking something in her down time.  We spent an afternoon baking last weekend and produced one of our favorite cookies and also tried a new recipe!  Both came out great so I thought I’d share the recipes.  Happy Baking!

Peanut Butter Peppermint Drops

Ingredients:

  –  1 (14 oz) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
–  3/4 cup peanut butter
–  2 cups biscuit baking mix (I used Bisquick)
–  1 teaspoon vanilla extract
–  Granulated Sugar
–  5 dozen chocolate kisses (In this case I used peppermint kisses for the holiday)

Instructions:

–  Preheat Oven to 375F
–  In large mixing bowl, mix condensed milk and peanut butter together until smooth.
–  Add biscuit mix and vanilla – mix well
–  Shape into 1 inch balls
–  Roll in sugar and then place on ungreased baking sheet
–  bake 6-8 minutes or until brown.  Immediately place candy kisses on center of cookies.

Voila!  Fast, easy and delicious!

Ghiradelli White Chocolate Macadamia Nut Cookies

Ingredients:

  –  1 cup (2 sticks) butter, softened
–  1 1/2 cups granulated sugar
–  1 cup brown sugar, packed
–  2 eggs
–  1 1/2 tsp vanilla extract
–  3 cups unsifted flour
–  1/2 tsp baking soda
–  1 tsp salt
–  2 cups (one 11oz bag) Ghiradelli Classic White Chips
–  1 1/2 cups macadamia nuts, chopped

Instructions:

  –  Preheat oven to 350F
–  Cream butter and sugars until fluffy
–  Add vanilla and eggs and blend
–  Blend in flour, baking soda and salt
–  Stir in white chips and nuts
–  Drop teaspoons of dough onto un-greased cookie sheet
–  bake for 10-12 minutes

Another easy recipe and the cookies were so delicious.

I baked so that I could share with friends and ended up packaging them in little gift bags.  These cookies are great to bring to holiday parties or just enjoy with family and friends.  I recommend both recipes to all 🙂
