Pumpkin Pancakes

‘Tis the season for Pumpkin flavored (almost) everything!  I’m such a fan of chai, pumpkin pie, and so many more of the fall season flavors.   I found this recipe recently and decided this was the morning treat I needed to start my Fall Sunday mornings off right with.

The ingredients you will need:

  • 1 1/2 cups milk
  • 1 cup pumpkin puree
  • 1 egg
  • 2 tablespoons vegetable oil
  • 2 tablespoons vinegar I substituted this with Apple Cider Vinegar
  • 2 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup Chocolate chips (I prefer dark choc) or Banana slices. (I added this just because I love sweets 🙂 )

I mixed all of the liquids first 🙂

Then I added all of the powder substances along with my dark chocolate chips.  I like to mix them in because then they melt inside the pancake as opposed to adding them to the pancake on the griddle.  They get burned that way.

I had a helper laying right under me the entire time hoping to catch any “scraps.”  I think she was even trying to hide under the rug!

I don’t turn my burner on until the batch is all mixed.  Then I use a spoon and scoop two big scoops per pancake.  I wait until they fluff up and bubble a little before flipping.

This recipe makes enough pancakes for at least four people.  It made a ton of pancakes and made the house smell amazing.  Enjoy!

    This Sunday, yes yes yes? I’ll be a helper and I know Eryka will too. Ron, on the other hand, will have to be slapped for stealling them right off YOUR plate!
